CATCH OF THE DAY DINNER PREPARATION – DUO D SQUID

Autumn is a great time of the year for eging, always plenty of calamari around headlands, rocky shores and weedbeds along the whole coastline. The Duo D Squid is a great choice for run and gun fishing, searching fast for active squid in deeper water or where there is lots of water current.

After the catch, preparation is the key to culinary success. Always keep them live in saltwater pools or place them on ice asap, wash and clean in saltwater, be it on location or when you arrive back home. As for cooking, that’s a personal preference but ignore all the old tales of soaking in milk, beating them with a meat cleaver etc. My preference is sashimi or quickly braised (under 30 seconds) in ginger and soy, plus add some rock salt, pepper and as usual chillies!

My main studio lights are Godox AD600, but in the kitchen the new AD300 Pro is perfect

This is a great compact strobe that is ideal for food photography. Super compact, lightweight and quick to setup with the XPro N. Great for tight spaces.
